About the role

The restaurant group is growing and wants a hands-on chef de cuisine to run the kitchen across its steakhouse and high-volume waterfront operations. The role combines cooking on the line with cost control, team development and menu creation. The group is also developing new culinary concepts, so the chef would have a say in that growth.

What you'll do

  • Run daily kitchen operations and hold the line on food quality, consistency, flavor and plating.
  • Write and cost recipes, specials and seasonal dishes, with accurate yields, portions and plating specifications.
  • Manage food cost, labor cost, ordering, inventory, waste and use of trim and by-products.
  • Inspect deliveries and manage relationships with seafood, meat and produce purveyors.
  • Train, coach and hold back-of-house staff accountable, and build Sous Chefs and cooks into stronger professionals.
  • Build schedules from forecasted sales, lead pre-shift meetings and coordinate with front-of-house on events and banquets.

Requirements

  • 5+ years of progressive professional kitchen experience.
  • Prior work as a Chef de Cuisine, Executive Sous Chef, Executive Chef or comparable kitchen leader.
  • Strong command of proteins, seafood, sauces, butchery, grilling, roasting and sauté techniques.
  • Working knowledge of recipe costing, inventory, purchasing, yields and kitchen labor management.
  • Current food-safety certification or ability to obtain it.
  • Availability for nights, weekends, holidays and peak periods, and ability to lift up to 50 pounds.

Nice to have

  • High-volume restaurant experience is strongly preferred.
  • Upscale dining and steakhouse experience is highly desirable.

Chefs in leadership roles often support an O-1B case with press coverage, awards, notable restaurant or critic recognition, judging or invited-event roles, and evidence of a distinguished record in the culinary arts. The posting states no citizenship restriction. An employer like this, or a U.S. agent, can file the petition, but approval depends on the individual's documented achievements.
